If you’re looking for a comforting carb side dish for a busy weeknight meal, these potato pockets could do the trick.

They are almost like a hash brown filled with spinach and cheese and I bet they would be incredible if you had a deep fryer.

It was such a busy night when we made these that we didn’t manage to capture the post-baked look and cross section so you can see the inside.

If we rebuy them we will update this post with those photos!

So would we buy Aldi Potato Pockets again?
