You know when you go through your pantry and realize you have had something forever and need to use it up? Yeah… well, that’s what happened with this Lidl cookie mix.

In America baking aisles go on for almost an eternity with mixes for cakes, cookies, brownies, breads, and all manner of goodies. You have store brands, classics like Betty Crocker, premium baking mixes like Ghirardelli, speciality gluten free, allergen free cookie mixes and the list goes on..
In Portugal it’s not quite like that and local pastelarias don’t generally have great cookies. I grabbed this chocolate cookie mix with (knock off) m&ms for some day when I wanted cookies but didn’t have the time to bother making them from scratch.

Based on most cookies I’ve had here, which are usually dry probably due to over baking combined with a lack of enough fat, my expectations were not super high and that’s probably why it took me so long to make them.

How to bake Belbake Rainbow Chocolate Cookies:
- Simply add 30g of butter and 1.5 soup spoons of water (lol)
- Bake for approximately 10 minutes at 180C or 160C for convention ovens.

The cookie mix made a perfect quarter sheet tray of half a dozen cookies.
I used a cookie scoop to divide the dough and rounded the dough between my palms before placing the unbaked cookie dough on a sprayed cookie sheet.

About 10 minutes later I had an adorable perfect-for-two batch of 6 cookies!

From low expectations to elation, these cookies were actually delicious! If you’re careful not to over bake them, you will have a delightfully fudgy, soft cookie with a gentle crisp where it rested against the baking sheet. The rainbow candy pieces will make you smile like a kid. 🙂
We ate these so fast that I didn’t even take any more pictures and I had to declare them dangerous to have on hand at all times. :p
These are easy cookies to make and enjoy. If you see the mix at Lidl Portugal, go ahead and grab a bag!
